the true flavour of an Umbrian holiday

Full familiarity with a place is only achieved at the table. The local cuisine gives expression to a culture that has been created down the generations.

The dishes served at the Convento di Agghielli are intimately linked to the immediate area and its products – a cuisine made up from research into forgotten flavours and fragrances, the rediscovery of ancient recipes which date back to the times of the Romans and the Etruscans. You are invited to taste again dishes both peasant and patrician from a long Umbrian tradition, served with the most careful choice of ingredients.

Fruit and vegetables are grown on the grounds of the Convent according to the rules and rhythms of nature. They are certified organic and bio-dynamic. There is no use of chemical fertilisers or weedkillers; the colour and taste come straight from the earth itself.

Livestock runs free in the wild meadows that surround the resort. Its gradual growth makes for lean and flavoursome meat. Red meats are bought from a biologically certified supplier. Every day the kitchen bakes its own fresh bread and the winemaker draws from our own barrels to bring to the table in a decanter.
